spanikopita burger
- minced bunch of scallions, sauteed in olive oil just until they start to break down.
- box of frozen spinach, thawed, water squeezed out thoroughly, and chopped very fine
- small container of crumbled feta cheese
- 1lb - ish of ground beef
put the feta in a large bowl and, if necessary, crumble further until the crumbs are very fine.
add the onions and the spinach and mix well.
add the ground beef and mix together well without over-mixing.
gently form into patties and cook for about five minutes on each side.
yum.

i was contemplating a vegetarian version. i wonder if you could use smoked tofu (since it's firmer) and process it into crumbs or something. maybe add some breadcrumbs as well.
you may need an egg to bind it, also.

I tried this recipe tonight- VERY tasty! And much better than meat straight up. Thanks!
You might also be interested to know that alls well that ends well even if you don't defrost the spinach, don't sautee the scallions, and happen to throw a fit of pique halfway through and end up kneading the meat almost into a fine powder.
(And I also burned them.)
