if i had a cooking show...
it would be all about grilled cheese sandwiches. every week, i'd show a different kind of grilled cheese to make, and the best sorts of things to have with that kind of grilled cheese.

I went through a very long grilled cheese period. I made grilled cheese sandwiches every way I could think of (well, not really -- I stuck with white bread and american cheese [I was poor and this was a long time ago]), ringing changes on the original model. The only one I remember from then was what I called a Mexican Grill. I sandwiched onions amidst the cheese, and put chili powder inside the sandwich. Were I doing it now, I'd saute the chili powder with the onions, or put it on the outside of the sandwich so it could cook with the butter.

Oh, I forgot: Something that seemed really odd at the time, but now seems good, was a grilled cheese samdwich made using pimento cheese spread. Mmmm.... I later ran into someone who grilled chicken salad sandwiches -- it was like eating chicken soup that you could hold in your hand.
When I was maybe 10 or 11, I first had the idea (duh) that maybe one could make grilled cheese sandwiches with cheese That Wasn't American Cheese. It seemed a Momentous Idea, so the cheap swiss cheese that was the inspiration came out of the refrigerator, went between two slices of bread, and into a frypan with some butter. I expected something foreign and exotic; what I got was a grilled cheese sandwich that tasted like Swiss cheese. Uncanny. I was horribly disappointed. I don't know what I was expecting, but it wasn't that.

joe, i had no idea! i think i am going to have to try the mexican grill idea.
phil... i'm afraid that i absolutely HATE tomato in grilled cheese. it ruins it for me. :(
